What is the secret to making a delicious New York style pizza?

I know about high glutin flour. I know about proofing the dough. But how come the pizza I make in my residential oven does not have the same thin buttery crust as a pizza restaurant? Is there some trade secret?

Traditional New York Pizzeria Dough & Sauce Recipe

This recipe was created in Venice, Italy, and has been served by The Mini Italia, New York
Pizzeria since 1956.

INGREDIENTS:

Dough Ingredients:
1 cup lukewarm water
2 tablespoons milk
2 teaspoons brown sugar
1 teaspoon salt
1 tablespoon shortening
1 tablespoon corn meal
1 tablespoon extra virgin olive oil
1 package yeast
3 cups all-purpose flour or unbleached white flour

Sauce Ingredients & Prep:

Combine the following ingredients in a sauce pan and cook into a smooth sauce, on medium heat, stirring regularly. Then, refrigerate or cool to room temperature before applying to the pizza.

2 cans (14.5 oz.) Roma or Furmano's Whole Peeled Tomatoes*
1 can (14.5 oz.) Roma or Furmano's Pizza Sauce*
1/4 teaspoon dried oregano, crushed
1/4 teaspoon dried basil, crushed
1/4 teaspoon dried marjoram, crushed
1/2 teaspoon California Garlic salt
1/4 teaspoon Cayenne black pepper

Cheese & Toppings:
2-3 Cups Shredded Mozzarella Cheese
Your favorite toppings
DIRECTIONS:

Dough Preparation

In a large bowl, mix water, milk, brown sugar, salt and shortening with an electric mixer on a low speed for about 1 minute.

Add corn meal, olive oil and yeast, and continue mixing it for one minute. Let it rest for 5 minutes.

Add the remaining flour and mix it with your hands.

Turn the dough out on a lightly floured surface and knead the dough about 8 to 10 minutes.

Form the dough into a ball and place it in a covered bowl at an ambient temperature of 70°F-85°F. Let it rest about 45 minutes to 1 hour.

Push down the dough and make a 12" to 14" circle with your hands or a rolling pin, if you prefer. See more specific instructions for Panning the Pizza Dough in our "How To Make Pizza" section.

Rub the olive oil on the baking sheet and place the pizza dough on it, let it rest for another 45 minutes.

Assembly & Baking

Preheat your oven to 400°F.

Brush the olive oil in the area of the pizza dough on the center, but not brush on the outer ring of the dough.

Spread the pizza sauce, mozzarella cheese and your favorite toppings on the dough.

Place the pizza into the oven on the lowest rack, reduce your oven temperature to 375°F, and bake about 8 to 10 minutes, or, until the crust has browned and the toppings are bubbly.

NOTES:

*The original recipe called for these brand name tomato products. Substitute with your own favorite brand, as necessary.

Terry Gilliam’s Nike ad # 1 - “The Secret Tournament”

During Spring 2002, new advertisements from Nike were broadcast featuring many of the world’s best footballers. The short films - made to tie in with the 2002 World Cup in Korea/Japan - were directed by Terry Gilliam. Two advertisements were filmed - “The Secret Tournament” and “The Rematch”. This webpage contains stills and behind-the-scenes pictures from the adverts.

“The Secret Tournament” was filmed in December 2001. Gilliam worked with Nicola Pecorini as Director of Photography and set designer Stefano Maria Ortolani. The advert, shot at Rome’s Filmhouse Studios, is set in the belly of a cargo liner. Within the cargo liner is a massive cage with turf. Where eight teams of three players play a tournament under the watchful eye of Eric Cantona.

“The Rematch” was filmed on January 28 and 29. Fraser Taggart was Director of Photography for this second shooting session.

The action takes place to the scintillating backdrop of a re-mixed version of the Elvis Presley song “A Little Less Conversation.” It’s the first time one of the King’s songs has been remixed.

What is the secret to a perfect omelet?

I know the recipe for an omelet and I know what I am supposed to do.

However, I can never get the omelet to fold over in half nicely. It always ends up breaking. I've only managed to get to stay in one piece a couple of time and I still haven't figured out what I did right those times.

So..What is the secret? When I make my omelets, I always do a two egg with cheese and ham.
A blender? Hmmmm… Never would have thought of that.

Is there anything simpler than a blender. It's just for my morning breakfast and it's a hassle to have to clean out the blender. Plus, it'll wake up the entire household!

The absolute secret to great omelettes is to add a little bit of milk or cream when you're whipping the eggs. It makes the eggs super fluffy and helps the consistency stay together.

On medium heat, use a small pan (either 6" or 8") and melt a pat of butter enough to cover the bottom. Pour in your egg mixture (I use 3 eggs) and as it cooks, push it in from the sides towards the middle. Tilt the pan so that the remaining wet mixture fills in the space you just made in the pan. Keep doing this until the omelette starts to solidify.

Peek underneath and when it's started to brown, flip it over. Turn the heat down to low. Add your fillings and fold the omelette in half.

Let it cook for a few seconds on one side then flip it to the other. Give it another few seconds on that side, then you should be done.
